After a much-acclaimed preview at Sydney’s Indie Spirits Tasting on 15 September, WE’VE LAUNCHED OUR LONG AWAITED aged apple liqueur, Pommeau!
“Every sommelier, bartender and distillery tour visitor who’s had a cheeky barrel sample, has been clamouring to get their hands on it” said Co-Founder, Sam Reid.
“It’s exactly what craft spirits drinkers are calling out for – something interesting, with real provenance and tradition – but made in a new world style” continued Mr Reid.
A true orchard to bottle story, the apples are pressed, fermented, distilled, aged and bottled just metres from where they’re grown in the William Smith & Sons orchard, in Tassie’s Huon Valley.
Joining our Apple Brandy, Pommeau is a natural addition to the line-up; a nod to the apple growing history of the Huon Valley and to North Western France, where Pommeau has been made for centuries by blending cider apple juice with apple spirit, prior to aging.
Head Distiller, Tim Jones said, “To achieve full depth of flavour and body, it’s critical the correct varieties of apples are used – so we have held off making this liqueur until we had sufficient traditional French and English cider apples.”
We blended pressed French and British heirloom apple varieties with our twice distilled Apple Spirit, before ageing for 12 months in small apple brandy casks.
“The resultant liqueur is rich and generous showing baked apple and spice – balanced with firm cider apple tannins and cask influence” said Tim Jones.
